Sauté the Aromatics
Heat oil or butter in a skillet over medium heat. Add onions and cook until soft and translucent—about 3–4 minutes.
Toss in garlic and cook for another 30 seconds until fragrant. Don’t burn it. Burnt garlic is the enemy.
Season the Beans
Add cumin, smoked paprika, chili powder (if using), and a pinch of salt. Stir until the spices bloom and smell irresistible.
Mash the Beans
Add the cooked beans and water (or cooking liquid) to the skillet. Use a potato masher or fork to mash until mostly smooth, leaving a few chunks for texture.
Pro tip: For extra silky beans, add a little more liquid while mashing. Don’t drown them, though—you want creamy, not soupy.
Simmer and Stir
Cook over low heat for 5–7 minutes, stirring occasionally. Let the flavors mingle, thicken slightly, and achieve that perfect refried consistency.
If you’re adding cheese, stir it in now. Creamy, cheesy magic.
Taste and Adjust
Give your beans a taste. Need more salt? A dash more? Too bland? Add a sprinkle of smoked paprika or cumin.
