Ingredients

  • 1 pound fresh green beans trimmed and blanched (or 3 cups frozen green beans, thawed)
  • 1 can 10.5 oz cream of mushroom soup (or a dairy-free cream of mushroom alternative)
  • 1/2 cup milk or cream
  • 1 small onion finely chopped
  • 1 cup crispy fried onions the crunchy topping, not the ring of sadness
  • 1 tablespoon soy sauce or Worcestershire-free substitute optional, for depth
  • Salt and pepper to taste
  • 1 tablespoon melted butter or olive oil for topping

Instructions

  • Preheat your oven to 375°F (190°C). Yes, you’re going to bake things that aren’t pizza. Crazy, I know.
  • Prepare the beans: blanch fresh beans in salted boiling water for 3–4 minutes, then cool quickly in ice water. Drain well. If using frozen beans, thaw and pat dry.
  • In a mixing bowl, whisk together the cream of mushroom soup, milk, chopped onion, and soy sauce (if using). Season with a pinch of salt and pepper.
  • Fold the beans into the creamy mixture until evenly coated. Transfer to a greased casserole dish.
  • Top with crispy fried onions. Drizzle the melted butter over the top for extra crunch and shine.
  • Bake for 25–30 minutes, until the edges are bubbly and the onions on top are golden and inviting.
