Prepare the beans: blanch fresh beans in salted boiling water for 3–4 minutes, then cool quickly in ice water. Drain well. If using frozen beans, thaw and pat dry.
In a mixing bowl, whisk together the cream of mushroom soup, milk, chopped onion, and soy sauce (if using). Season with a pinch of salt and pepper.
Fold the beans into the creamy mixture until evenly coated. Transfer to a greased casserole dish.
Top with crispy fried onions. Drizzle the melted butter over the top for extra crunch and shine.
