Ingredients

  • 2 cups cooked chicken chopped (grilled, roasted, or rotisserie—your call)
  • 1/2 cup mayonnaise or Greek yogurt for a lighter vibe
  • 1 tablespoon lemon juice or a quick splash of lime
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh herbs parsley, chives, or dill—your flavor destiny
  • Salt and black pepper to taste
  • Optional add-ins: diced apple grapes, toasted almonds, or craisins for sweetness

Instructions

  • Grab a medium bowl and dump in the chopped chicken. Break up any big pieces so every bite is a party.
  • Add mayo (or yogurt). Give it a good stir until the chicken looks creamy but not drowned. You want coating, not a sauce flood.
  • Stir in lemon juice, celery, red onion, and herbs. The crunch and brightness are what make this sing.
