Bbq Chicken Sliders

Ingredients

  • 2 cups shredded cooked chicken or rotisserie chicken, shredded
  • 1 cup of your favorite BBQ sauce
  • 1/2 cup coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 12 slider buns
  • 1 cup shredded cheddar or Monterey Jack cheese optional
  • Salt and pepper to taste
  • Optional toppers: pickle slices sliced jalapeños, crispy fried onions

Instructions

  • Preheat the oven to 350°F (175°C) if you’re melting cheese or warming everything all together. If you’re not, skip the oven and use a skillet. Your call.
  • In a bowl, mix shredded chicken with BBQ sauce. Stir until every shred is smiling with flavor.
  • In a separate bowl, whisk mayo and apple cider vinegar. Add a pinch of salt and pepper, then fold in the coleslaw mix. You want it coated but not soaked.
  • Split the slider buns. If you like a little crust, toast the cut sides for 2–3 minutes.
  • Layer: bottom bun, a mound of BBQ chicken, a spoonful of slaw, and a sprinkle of cheese if using.
  • Top with the bun halves. If you’re melting cheese, place sliders on a sheet and pop in the oven 5–7 minutes until cheese melts and buns glow with happiness.
  • Serve warm with extra BBQ sauce on the side for dipping. Enjoy the bite-sized bliss without any ceremony.
